- Manure application
- Mulching, integrating tree residues
- Soil cover
- Insect habitat and biodiversity hubs
- Organic Farming since 2013
Investment costs
- Partnership with an external sheep herder
- Plantation of new trees for ideal keyline design
New practices

Animal Integration
❍ Rotational Grazing

Adding organic matter
❍ Cover Cropping

Mulching
❍ Water Cycle Restoration
Challenges we want to address with the transition
- Erosion control on steep slopes to improve water infiltration and increase the overall plant coverage to support the soil
- Drought, which is overall a big challenge in Andalusia
“Bajo los olivos means “under the olive trees.” Our name is no coincidence: beneath the trees lies the soil — the foundation of everything we do. If the soil isn’t healthy, neither are the olive trees.
That’s why we focus on nurturing biodiversity, observing what lives in and around the soil, and understanding the entire ecosystem. Under the olive trees, it is our vision to regenerate nature and create a balance between agriculture and the environment.”
— The reason why Bajo Los Olivos decided to transition to regenerative agriculture
Future ambitions
Integrate sheep to improve soil health
Create a community to learn from each other and share the benefits of regenerative agriculture
