  • The finca was acquired by Pedro’s parents in 1985 and managed conventionally 
  • Organic transition of the olive grove in 2013
  • Today, Laura and Pedro are working to restore soil health, promote biodiversity, and create a place that thrives as part of its natural ecosystem

Challenges we want to address with the transition

  • Erosion control on steep slopes to improve water infiltration and increase the overall plant coverage to support the soil
  • Drought, which is overall a big challenge in Andalusia

Bajo los olivos means “under the olive trees.” Our name is no coincidence: beneath the trees lies the soil — the foundation of everything we do. If the soil isn’t healthy, neither are the olive trees.

That’s why we focus on nurturing biodiversity, observing what lives in and around the soil, and understanding the entire ecosystem. Under the olive trees, it is our vision to regenerate nature and create a balance between agriculture and the environment.
